That's Medieval Cuisine in the Islamic World, Lilia Zaouali, tr. M. B. DeBevoise; a fascinating little book, even if there is more emphasis on sheep tail fat than I personally would like. But history is what it is. Also I now have enough couscous to last me until the middle of next week...
