In retrospect, should have retarded the loaves after final shaping (that it, bung them in the fridge overnight)... the sourdough starter appears to be feeling vivacious and witty at the moment and they've over-risen the loaf tins dramatically. When I took the tea-towel off they had the flat, slightly creased, faintly leathery aspect of your average bog person (but not the colour).
Ah well: we'll see how they bake!
